“We wanted to be thoughtful in our approach when it came to reopening the restaurant,” said Vice President of Hospitality Dan Callaway. “I’m proud of how our hospitality program took this unprecedented downtime to research, innovate, improve and release a great new menu as we move forward in a new direction.”
Diners can also expect to see fresh new faces throughout the restaurant, including executive chef James-Stuart “Stu” Plush and beverage director Brandon “Habi” Habenstein. Chef Stu is new to Bardstown Bourbon Company, while Habi previously served as national brand ambassador.
Previously executive chef at The Bourbon Academy Tasting Room, chef Stu also served as sous chef at Charr’d Bourbon Kitchen & Lounge and Winston’s, as well as chef and kitchen manager at Farm to Fork Catering. Born and raised in Kentucky, chef Stu draws upon inspiration from his life growing up in the Bluegrass.
“Bardstown Bourbon Company’s goal has always been to create a modern bourbon experience in the first Napa-valley style destination on the bourbon trail, and our new menu reflects that,” said chef Stu. “The lineup is full of contemporary takes on classic Kentucky dishes.”
Chef Stu’s menu celebrates local farms and regional businesses, including Broadbent Food Products in Kuttawa, Kentucky; Col. Bill Newsom’s Aged Country Hams in Princeton, Kentucky; Father’s Country Ham in Bremen, Kentucky; Keene’s Hams in Bardstown, Kentucky; Kenny’s Farmhouse Cheese in Austin, Kentucky; and Sixteen Bricks Artisan Bakehouse in Cincinnati, Ohio.
Highlights include country hams with bourbon grains; Kentucky poutine with white cheddar cheese curds and Jake’s sausage gravy; collard green wontons with smoked turkey and Capriole Farms goat cheese; a classic Wagyu burger with Kenny’s swiss cheese; and the beloved shrimp and grits with Kentucky country ham, filet mignon and braised pork.
The distillery and culinary collaboration extend to behind the bar with a modernized cocktail menu just in time for summer. Guests can expect fresh ingredients, sustainable methods and a twist on old favorites, like a peachy mint julep, boozy slushies and the Ship Shape – a bourbon cocktail served on a smoked Bardstown Bourbon Company barrel stave. The popular barrel-aged cocktails remain, along with a curated beer and wine list.
